All my chocolate lovers raise your hands!! Yep, I love chocolate and can’t wait for you to try these vegan no-bake brownie bites. Super easy to create and, trust me, your kids will love them!

This simple recipe requires no oven and incorporates healthy ingredients chock full of minerals and vitamins.

I also love these because they’re convenient for girls on the go and busy mommas like myself. They’re also great for the kids’ school lunches.

I usually have a chocolate craving mid-afternoon while at work. My usual go-to would be a kit kat or twix; now I just grab a couple of these and the craving is gone.

Also, unlike your typical brownie recipe which includes eggs, this one can be made 100% vegan by using vegan chocolate chips. You can also play around with different toppings like chopped nuts or add shredded coconut as alternatives.

Ingredients for No-Bake Brownie Bites

To begin, you will need the following ingredients.

1/3 cup cacao powder – you can use cocoa powder but I chose to use cacao powder for added nutritional value.

10 majool dates – dates are high in fiber which keep you full longer. They are great for this recipe and add sweetness. Important- Make sure you remove any pits from the dates.

1 cup of walnuts – rich in antioxidants and ALA (alpha-linolenic acid), a plant-based omega 3 fatty acid.

1 tsp vanilla extract – don’t forget to add this ingredient. It adds a delicious flavor to your brownie bites.

1/4 tsp salt – a pinch of salt adds amazing balance to this chocolaty treat.

1/3 cup chocolate chips – make this recipe vegan by incorporating vegan chocolate chips or add white chocolate for alternative taste.

This recipe yields about 6-10 brownie bites. I like mine a bit larger so I’m able to make 6.

How to Make Vegan No-Bake Brownie Bites

Step 1: Blend walnuts and cacao powder in a food processor or blender.

Step 2: Add dates, vanilla, and salt to food processor and mix. If the mix is crumbling, you may add about 1/2 tsp of water and mix to get a sticky batter consistency.

Step 3: Once the mix is a creamy texture, transfer to mixing bowl.

Step 4: Add chocolate chips. And fold into mixture.

Step 5: Lastly, roll about 1 TSP of the mixture into bite-size balls and place on parchment paper. I like to stick them in the fridge for about an hour and enjoy.
